Local chefs have been filling their salumi needs by seeking out Salt & Time at a couple of farmers markets around Austin, TX, where they sell small batch cured meats, sausages, charcuterie and pickles. This month, they opened their first brick and mortar location at East 7th Street.

Owner Ben Runkle was a vegan for 10 years because he was concern about the environment, until he realized that eating fake meat may be having a more negative impact that actually eating meat responsibly. At that point, he started to connect to local farmers and find out how they raise and care for their animals.

His craft has local chefs like Aaron Franklin of Frankin BBQ, Jesse Griffiths of Dai Due and Paul Qui of QUI Restaurant raving about his products.

“It's a salumeria and they sell their products at the farmers markets. They break down whole animals in-house and are amazing. We don’t have anything else like that in Austin.”
