In the old days, moonshine was illegal hooch. Today, it's called artisanal. Bartender Maggie Ruppert, of Halcyon, Flavors From the Earth in Charlotte, NC shares her favorite local distillers and a cocktail recipe for the Shanghai Speakeasy.

Glass: Collins

Garnish: Orange Wheel


Ingredients

- 1.5 oz. Catdaddy Carolina Spiced Moonshine

- 0.25 oz. Chai Tamarind Syrup*

- 3 oz. Strong Oolong Tea (3 teabags to 2 cups water)

- Orange Wheel Garnish


Directions

1) Pack a Collins glass with ice.

2) Add moonshine and syrup.

3) Top with Oolong tea.

4) Pour contents into shaker and shake to homogenize.

5) Pour contents back into glass and top with extra ice and Oolong tea.

6) Garnish with an orange wheel.

7) Serve.


*Chai Tamarind Syrup

1) Steep three chai teabags in 2 cups water.

2) While water is still hot, add 2.5 cups granulated sugar and stir until totally dissolved.

3) Add a pinch of cracked black pepper, and a pinch of cracked white pepper.

4) Add a teaspoon of tamarind concentrate (find at any Asian market).

5) Shake contents to homogenize syrup.
