What

A lighter twist on the classic Negroni from Joe Campanale, sommelier / owner of dell’anima, L’Artusi, and Anfora in the West Village in New York.

Why

The Sbagliato substitutes sparkling white wine for gin to make it effervescent and lower the alcohol. Campari and oranges are natural partners, but when you roast the oranges, you bring in a whole new layer of complexity.

Sommelier and co-owner of dell’anima, L’Artusi, and Anfora in the West Village and L’Apicio in the East Village.

Why

Joe is a Certified Sommelier by the Court of Master Sommeliers. He has a master's degree in Food Studies from NYU, previously worked at Babbo, makes his own limoncello and grappas, and is known for highlighting small and interesting wine producers on his lists.

Roasted Orange Negroni Sbagliato

Yield

1 drink


Ingredients

- 1 roasted orange wedge (see below)

- 1 oz, sweet red vermouth

- 1 1/4 oz Campari

- 1 1/4 oz Lini Lambrusco Bianco, or other sparkling white wine

- Orange peel for garnish


Directions

1. Place the orange in a mixing glass and add vermouth.

2. Muddle so that the charred bits are released into the vermouth.

3. Add Campari and ice, and stir.

4. Strain into a chilled rocks glass that is filled with ice and top with sparkling wine. Do not stir.

5. Garnish with orange peel.


Roasted Orange Wedges



Directions

1. Slice oranges into wedges and place in a sealable container.

2. Top with sweet red vermouth and refrigerate overnight.

3. In the morning, remove from the vermouth.

4. Char on a grill (or roast in oven) until the sugar caramelizes and black specks form on the oranges.
