The Honey Beer

A perfect pairing for the gin-cured scallop recipe, also from JoeDoe.
Yield
1 drink
Ingredients
- 1.5 oz DH Krahn Gin
- 1 oz fresh lemon juice
- 1 tsp lemon zest
- Dales Pale Ale
- wildflower honey
- kosher salt
Directions
1. Dip half of a rim of a Pilsner glass in wildflower honey and lightly in kosher salt.
2. Shake Gin, lemon juice, and lemon zest with ice.
3. Strain into half-rimmed pilsner glass.
4. Add ice.
5. Top with Beer.
6. Garnish with lemon peel.
