With craft cocktail bars, the best spots tend to be at the bar, giving the imbiber the opportunity to ask questions and drink through a thoughtfully choreographed progression of cocktails. At Pouring Ribbons though, all staff are trained behind the bar and on the floor. “As a server on a Saturday night at 11 o’clock you don’t even mention a Ramos Gin Fizz,” Toby notes. “You don’t even think about a Ramos.”
