“Valerie really knows flavors and textures. Her Durango cookie is just perfect. It has almonds, chocolates and salt and it’s buttery, a little chewy and crystal on the edges. It’s the world’s most amazing chocolate chip cookie, but instead of walnuts she uses almonds. Her petit fours are dense, buttery, moist and chocolate on the outside.”

“It’s a little hole-in-the-wall in a little mini-mall and we like to come here for lunch. They have excellent falafel for five dollars that are really well made.”

“The food is amazing. The pickles here are the best pickles that I’ve ever had in my life. I love the coconut-curried mussels, sausage and cauliflower. The drinks and pastries are delicious. The mochi are just incredible.”

“They have wonderful oatmeal pancakes and the Canadian bacon and scrambled eggs are amazing. Their burgers are great and the sausages are homemade. They buy whole animals and source them from a farmer they know. Every piece of the animal goes into a dish. The food is very simple and really high quality.”

“This underground Japanese Kobe beef place is one of our favorites. You have to be invited by the chef or someone who is friends with the chef and he personally gives you his cellphone number.”

“They have the best carne asada burritos ever. They’re very simple with just meat and beans, but the beans are almost soupy, like something your grandma would make. Then just a simple salsa on top that is phenomenal.”

“It’s Italian food, but it’s Italian from our eyes with a lot of pastas and techniques that I’ve learned from different Italian restaurants, but a lot of the influences are from back home in Israel.”

- Chef Ori Menashe on Bestia

Husband and wife team and chefs Ori Menashe and Genevieve Gergis are giving Italian food a unique spin at Bestia in Los Angeles. Executive chef Ori adds influences from his Israeli background to give their cuisine a more modern Mediterranean approach. Known for their wood-fired pizzas and cured meats, you’ll find lesser known bits taking center stage like lamb neck, beef tongue, chicken hearts and gizzards. “I feel like these ingredients are the most packed with flavor and if you execute them right, they really shine.”

Genevieve takes on the sweet duties as pastry chef, “I love desserts more than anything!”
