About Aska
The Experience
We want to provide an environment that feels accessible and fun where we can cook quality food minus the stuffiness of most fine dining restaurants. It’s about creating a memorable experience for everyone that comes in by offering something different than what they might normally expect and hope that they enjoy it and come back for more.
Foraging Ingredients
It depends on the season. In spring and summer, a lot of the components on the menu are foraged. When fall and winter come around, you’ll find more preserved items that we picked earlier in the year. We find a lot just outside of the city, upstate in the Hudson Valley. There’s so much greenery.
Your Cooking Versus Classic Scandinavian
Gravlax and meatballs are not what we do at Aska, but our cooking is still based very much on flavor memories from growing up in Sweden. We use ingredients from New York and the Northeast region so we are also inspired by our surroundings and that’s reflected in the food.
Aska’s Dinnerware and Serving Trays
Tammer and Danny from the company Bower made the wooden trays and they’re based in Williamsburg. Jane Herold, a potter from Palisades makes our plates and bowls.
Scandinavian Staples
Salty Licorice
It’s delicious and has a distinct flavor, although it’s not for everyone.
Rapeseed Oil
I always bring some back to New York with me after visiting home. It has a floral, nutty flavor that I love. I use it for everything.
