Chef Hiroyuki Urasawa grew up in his father’s restaurants in Tokyo and apprenticed under master chefs in Kyoto before apprenticing for Masa Takayama at Ginza Sushi-ko. He’s one of the few chefs in the United States to be licensed to serve authentic blowfish. The focus at Urasawa is the food, not the decor. You’ll find the restaurant to be simple and sparse with an unfinished maple counter and simple stools. Just note that eating sushi prepared by a private chef on 300-year-old tableware is not an inexpensive proposition.
