Master Chef Shiro Kashiba was born in Japan's traditional city of Kyoto. He packed his bags as a teenager and trained with the culinary masters on the infamous Ginza in Tokyo. In 1967, Shiro opened his first Seattle restaurant, the original Nikko Restaurant on King Street. He opened Shiro’s in 1994. Chef Shiro Kashiba is a two-time James Beard nominee. He serves classical Japanese cuisine using local seafood and ingredients from the Pacific Northwest.

It’s off-the-hook adventurous and delicious. Live uni right out of the shell, and prawns straight out of a live tank were the sweetest thing I've ever tasted. Incredible!
