A financier recipe from Parisian master baker Eric Kayser of Maison Kayser.
Financier Recipe

- 4.5 oz of butter
- 1 vanilla bean
- 4 egg whites
- 1 pinch of salt
- 3.5 oz sugar
- 3.5oz vanilla sugar
- 1 oz almond powder
- 2.5oz flour
- 1/2 tablespoon baking powder
Directions
1) Warm the butter with the vanilla bean split open length-wise, until it become slightly brown.
2) Whip the egg whites and the salt, then, incorporate the sugar and the vanilla sugar.
3) Mix and the almond powder, baking powder and flour all together. Then incorporate gently this mix into the egg whites.
4) Keep the mixture refrigerated for one hour.
5) Pre-heat the oven to 350 degrees F.
6) Fill the molds with the mixture and bake for 15 minutes.

He is known for his sourdough breads that are created using a traditional and natural liquid starter and without commercial yeast.
