The result is the unique combination of an earthy, nutty taste with a piquant kick.
The hybrid cheese starts with fresh milk from a single dairy and then uses different cheese-making techniques: "cheddaring," piercing and cave-aging.

Amy recommends pairing it with a wine or beer that is tart, slightly sweet and effervescent. Something that will go well with the full flavored fudgy cheese.
Specifically, she recommends the Braida di Giacomo Bologna Brachetto d'Acqui from Piedmont, Italy which she’s used in cheese pairing classes.
