Burnt End Beans

Yield
Serves 4 to 6
Ingredients
- 2 oz. vegetable oil
- 1 onion, diced
- ¼ lb. bacon, diced
- 4 oz. chopped garlic
- ¼ cup brown sugar
- ¼ cup BBQ sauce (use your favorite “red” bottle brand)
- ¼ cup white vinegar
- 4 oz. Dijon mustard
- 4 cups white beans, cooked & drained
- 8 oz. BBQ Beef and pork burnt ends
- Salt and pepper to taste
Directions
1) Heat a large sauce pot to medium-high heat.
2) Add the vegetable oil and bacon.
3) Render bacon slowly until slightly crisp and brown.
4) Add the onions and garlic and sauté until translucent.
5) Add brown sugar, vinegar, BBQ sauce, and mustard and bring to simmer.
6) Reduce the heat slightly.
7) Add the beans and pork burnt ends, season to taste with salt and pepper.
8) To finish, garnish with crispy fried onions.
