Gateau Sirop

Syrup cake is what is known as an “every day cake” it was kept around the house to be enjoyed anytime. It is a spiced dark rich cake, sweetened with cane syrup, which is sugar cane cooked down until dark and thick. Sugar cane is one of Louisiana’s biggest crops, so you can see how this cake has become a classic in Acadiana. I recommend Steen’s Cane Syrup; it is made locally in Abbeveille, LA, and has been since 1910. Around here, Steen’s is a synonym for cane syrup.


Ingredients

- 2 cups canola oil

- 3 1/2 cups cane syrup

- 2 cups raw sugar

- 2/3 cup dark molasses

- 4 tsp baking soda

- 2 cups boiling water

- 8 eggs

- 4 tsp ground cinnamon

- 4 tsp ground cloves

- 4 tsp ground ginger

- 4 Tbsp vanilla extract

- 4 cups sifted all-purpose flour

- 3/4 cup chopped pecans


Directions

1. Mix oil, cane syrup, sugar and molasses in a bowl.

2. In a separate container stir baking soda into boiling water, add to above mixture. Add all remaining ingredients, other than pecans. Beat well.

3. Pour into a greased 12 x 20 hotel pan.

4. Bake at 350 degrees F for 30 minutes. Rotate pan and add chopped pecans to the top, and bake for another 15 minutes, until cake is done throughout.

5. Serve drizzled with cane syrup and vanilla ice cream.

Chef Roberthon has earned respect for his Cajun cooking from fellow Louisiana chefs. People travel for his Zydeco breakfasts, with live music and a menu that includes Stuffed Oreilles de Cochon (boudin stuffed beignet dough shaped like a pig’s ear) and Couche Couche (traditional Cajun cereal).
