Patrick Cappiello, Pearl & Ash’s Wine Director and managing partner, has put together a very respectable 1,000-bottle wine cellar, which includes many unique gems. He worked as a sommelier at TriBeCa Grill, Veritas, and Gilt. He was nominated for Wine Enthusiast’s Sommelier of the Year in 2012 and won the Wine Spectator Grand Award in 2011, which is indelibly marked with its three-glass logo on his left leg. He also has a half-sleeve tattoo of St. Vincent of Zaragoza, the patron saint of wine.

Q. What is the point of view you’re taking with your wine list?
A. Our goal is to provide a wine list with breadth of producers and depth of vintages, in classic and emerging wine regions. The wines we select are often small production hand crafted wines, and in many cases employ organic farming methods. We are committed to prices with very low markups. We want to share our love of wine with others and make them accessible to everyone’s budget.
Q. What are some of the gems on your list?
A. Jacques Lassaigne’s Champagne Extra Brut Blanc de Blancs-les Vignes de Montgueux for $95; Domaine aux Moines 1994 Savennières-Roche aux Moines from the Loire Valley for $63; Arianna Occhipinti’s 2012 SP68 Nero d'Avola e Frappato from Sicily for $49.

The best Thai food in NYC. I feel like everyone knew this 10 years ago, but the emergence of high profile chefs cooking Thai food has put this place off many people’s radar. The best bets are: A-5 Bean Thread Salad, N-5 Drunken Noodles, C-16 Sauté Crispy Pork Belly, C-9 Sauté Chinese Broccoli.
