Q. Tell us about some of the wine producers you like.

[Lage Lund]

There are a lot of them, but definitely:

- Olivier Lemasson

- Andrea Calek

- Axel Prüfer

- Herve Souhaut

- Elise Brignot

- and more.

[Ben Street]

Gilles Azzoni's incredible white got me into natural wine. Also, Emile Heredia, Christian Binner, Olivier Cousin. I adore Christine and Joel Menard, Claude Courtois, Olivier Lemasson and Jean Foillard.

[Anthony Wilson]

From France:

- Olivier Lemasson

- Domaine Chamonard

- David Dupasquier

- Domaine Les Roches

- Clos Siguier

- P-U-R

- Domaine Belluard

- Overnoy / Houillon

- Gérard & Bruno Schueller.

In the USA:

- La Clarine Farm

- NPA.

From Germany:

- Clemens Busch

From Italy:

- Cappellano

- Montesecondo

- Arianna Occhipinti.

[Bill Stewart]

Favorites in the Northern Rhône include:

- Thierry Allemand

- Auguste Clape

- Dumien-Serrette

- Marcel Juge

- Jamet

- Alain Graillot.

In the Southern Rhône, Vieux Télégraphe and their Vin de Pays de Vaucluse called Le Pigeoulet, and Château de Fonsalette.

In the Loire, I love the Muscadet from Domaine de la Pepiere, also Olga Raffault, Bernard Baudry, Nicolas Joly and Château de l'Epire.

I buy a fair amount of Beaujolais like Foillard, Thevenet and Bouland.

In Italy, I'm a fan of Produttori del Barbaresco.

[Matt Penman]

Getting my patriotic plug out of the way early: I love Seresin Vineyards in Marlborough, New Zealand. They make my favorite Sauvignon Blanc and they're practicing biodynamic.

Also, Jamet, Marcel Lapierre, Jean-Paul Thevenet, Hervé Villemade, Marcel Deiss, Emile Heredia, Christian Venier, Arianna Occhipinti, and crazy Frank Cornelissen.

I also have a soft spot for Huet and Nicolas Joly.

[Matt Brewer]

One of my favorites right now is Julien Guillot of Vignes du Maynes.

Jean-Pierre Robinot's Concerto d'Oniss was probably the first natural wine I ever consumed and always brings on a feeling of nostalgia.

Christian Ducroux makes some of my favorite wines in Beaujolais and he adds little to zero sulfur.

Jean Foillard's wines have always amazed me.

I also love the wines of Thierry Puzelat, Olivier Lemasson, Frank Cornelissen, Claude Courtois, Emile Heredia... and the La Bota sherries!

Q. What was the last good bottle of wine you took backstage?

[Lage Lund]

Egly-Ouriet NV Champagne Brut 1er Cru “Les Vignes de Vrigny.”

[Ben Street]

Auguste Clape 2001 Cornas.

[Anthony Wilson]

It was “L'Insurgé”, a Gamay from the young Loire producer Jérémy Quastana. I drank it all night! It was one of four wines poured by Cory Cartwright of Selection Massale at the final show of my recent residency at Blue Whale in Little Tokyo, Los Angeles.

[Bill Stewart]

A Marcel Juge 2006 Cornas -- it was very good, actually.

[Matt Penman]

Erben von Beulwitz 2005 Riesling Spätlese.

[Matt Brewer]

Last time I was in Italy, I played at the Vicenza Jazz Festival, and was astonished to see row after row of Cascina degli Ulivi’s Semplicemente red and white lining the shelves. This was the one and only time I've seen natural wine at a jazz venue.

Q. Which bar or restaurant do you often find yourself re-visiting when on the road?

[Lage Lund]

Paris | La Robe et Le Palais

Tokyo | Shonzui

[Ben Street]

Paris | La Robe et Le Palais

Paris | Le Baratin

When I feel courageous.

[Anthony Wilson]

London | Terroirs

I really love the people who work at Terroirs. From my first visit there they have always made me feel like I'm at home.

[Bill Stewart]

Paris | La Robe et Le Palais

Great food, unpretentious, moderately priced with friendly staff, and excellent wines on the natural side.

Paris | Fish La Boissonnerie

On the left bank, they serve moderately priced, great French food with an excellent Rhône-centric wine list.

Rome | Enoteca Cavour 313

It's a great lunch choice and the food is on the lighter side, which helps in avoiding I.F.B. (Italian Food Buildup).

[Matt Penman]

Vienne, France | Au Verre en l'Air

Very close to where the jazz festival happens -- a superb restaurant with a young chef who will improvise your menu if you ask.

Tain-l'Hermitage, France | Le Mangevins

For a great selection of Rhône wines.

San Francisco, CA | Arlequin Café

In Hayes Valley, it’s a cafe attached to a wine store where you can buy your bottle and drink it with a soup and sandwich. I once went there five days in a row for lunch.

[Matt Brewer]

Paris | La Robe et Le Palais

The food is wonderful and surprisingly affordable by Paris standards. They always have some funky natural wines that I've never seen in the States.

Paris | Alain Passard's L'Arpège

It’s stunning. They have a decidedly un-snooty wait staff and Mr. Passard greets each table personally; his food may be the perfect balance of incredible sophistication and soulfulness.

Barcelona | Cal Pep

I often find myself at Cal Pep.

Parma | Cocchi

I had the best ravioli of my life. It’s a really classic restaurant with old-school waiters and elderly couples dressed for a night out. I kept ordering bottles of Arianna Occhipinti's Nero d'Avola until finally they ran out.

Q. If only the hotel mini-bar stocked...

[Lage Lund]

The Thierry Puzelat Pétillant Naturel!

[Ben Street]

Sablonnettes!!!!!!!

[Anthony Wilson]

Mauro Vergano "Americano" or Montilla-Moriles Gran Barquero Fino Sherry... I might never make it to the gig!

[Bill Stewart]

Domaine de la Pepiere Muscadet would be nice, or just a simple Côtes du Rhône or Chinon.

[Matt Penman]

Muscadet, please.

[Matt Brewer]

Jo Landron’s Amphibolite Muscadet and Christian Ducroux's Prologue.
