Processing The Beans
Three processing systems are used: natural, washed and peeled cherry. The natural (dry) process preserves the body and sweetness. In the wet process, the fruit is rested in tanks which results in acidity, flower-like and fruity flavors. The peeled process (the intermediary between dry and wet) separates ripe cherries. The peels are removed, but the grain mucilage (a thick, gluey substance) is kept, which balances the sweetness, body and aroma.
