NOTES FROM THE FIELD: CABRITO
March 3, 2010
Can be crowded and noise levels reverberate intensely, but...
I have consistently thoroughly enjoyed eating at Cabrito, thanks to:
- one of the best Margaritas in town
- attentive service
- incomparable Heritage Breed pork Carnitas
- authentic and intense short ribs.
The guacamole seems to be on another level in terms of depth of flavor.
The short rib dish is a hearty braise in a rich and earthy New Mexico red chile sauce. It is so challengingly authentic and intense, I could not believe it was being served in New York.
