Diners & Farm Stands Chefs Love in the Hudson Valley
If you’re taking a road trip to see the leaves at their Technicolor peak, here are recommendations from area chefs for your trip. Stop off at roadside farm stands to pick your own apples and buy cider donuts and fuel up with casual eats at local diners. “This is a really old, highway stop diner. They have a menu of 400 things and half of it is good. I’ll order something like stuffed shells, but I really like that they carry Roscoe Beer Company ale.”
Brendan McHale is the chef at The Eddy in New York’s East Village and on weekends he goes fly fishing in the Catskills. “I go to Roscoe, New York, where Beaverkill River and Willowemoc Creek are. It’s really pretty and when you drive up 17 West, you see a lot of the farms from the Union Square Greenmarket, like Mountain Sweet Berry Farm and Berried Treasures. A lot of our ingredients we use at the restaurant are from this little valley, so I feel emotionally connected to the area.”
Just one note of caution if you are gong fly fishing, heed Brendan’s warning. “Bananas are bad luck when fishing. It’s a curse. It’s universal amongst fishermen, mostly salt water. You can’t bring bananas on a fishing boat or in the car. If someone had bananas, skunked. Nothing.”

“I come here to buy apples plucked right from their trees and fresh-baked cider donuts.”
Chef David Wurth owns Crossroads Food Shop in Hillsdale, a cafe serving seasonally-driven dishes. Wurth moved to the area after working at Savoy in Manhattan, which was a pioneer restaurant in farm-to-table cooking and an early proponent of the Union Square Greenmarket. Wurth still shops local farms for ingredients. “The farm stands that dot Columbia County are my main source for fruits and vegetables in the spring, summer, and fall.”

Josephine Proul is the executive chef of Local 111 in Philmont, New York. Known as a hard core locavore chef, she has won awards for her commitment to using local products. She recommends this diner from the owners of Grazin' Angus Acres in Ghent, NY, which serves organic and biodynamic (when possible) food, including their own grass-fed Black Angus beef. “They have the freshest ingredients and humanely raised too! We use their ground beef at Local 111 for our burger.”

Ben Freemole and John McCarthy are co-chefs and owners of The Crimson Sparrow in Hudson, they recommend Another Fork in the Road in Milan/Red Hook. “This is a finer diner because chef Jamie Parry just does a really killer breakfast, lunch and dinner service. He’s very locally-focused and his menu reflects that. He does the kind of food that you crave again after you eat here. He does a great job.”
