Lamb Burger with Kimchi Slaw

Yield

Serves 4


Ingredients

- 1½ lbs ground lamb

- 2 eggs

- ¼ cup bread crumbs

- 1 teaspoon salt

- 1 teaspoon pepper

- 2 teaspoons corn oil

- 4 slices havarti cheese

- 6 oz Korean kimchi from a jar, rough chopped

- 2 tablespoons good quality mayonnaise

- 1 teaspoon lemon juice

- 2 teaspoons chopped fresh mint

- 4 good quality hamburger buns


Directions

1) Pre-heat oven to 375 degrees F.

2) First make the burger patties by combining the ground lamb, eggs, bread crumbs, salt and pepper into a mixing bowl.

3) Work together until evenly mixed up.

4) Form 4 identical looking patties and chill in the refrigerator until ready to fry.

5) Heat a skillet with the corn oil over medium heat. 

6) Add the burger patties and fry 4 minutes on one side. 

7) Flip the burger and fry for another 3 minutes on the second side.

8) Transfer the patties to a baking sheet, and let finish in the oven for about 10 to 15 minutes depending on the doneness of the burger you prefer.

9) In the meantime, make your kimchi slaw.

10) Rough chop the kimchi into a bowl along with the mayonnaise, lemon juice and the mint. 

11) Toss everything together with a fork.

12) Take the patties out of the oven when the burgers are just about done, place the havarti cheese on top of the patties, and return the patties into the oven just long enough to melt the cheese. 

13) The havarti will melt rather quickly.

14) Once melted, slide the patties onto the burger buns, and top with the kimchi slaw. 

15) Serve immediately.
