At his new spots Doi Moi and 2 Birds 1 Stone, bar manager Adam Bernbach is working with a variety of ingredients making sodas and both classic and original cocktails. At Doi Moi, he’s focused on Vietnamese ingredients, including tamarind, passionfruit, coconuts, Galangal and ginger. He’s making fruit sodas that work well with chef Haidar Karoum’s food that’s inspired by the street food and the street vendors of both Vietnam and Thailand. Downstairs at the bar, 2 Birds 1 Stone, where the classic and original cocktails are being stirred up, he’s been inspired by using sherry in cocktails.

Glass: Small Wine or Sherry Glass
Ice: Cubes for Stirring
Garnish: Orange Twist
Ingredients
- 2 oz Manzanilla Sherry
- 1.25 oz Cocchi Americano
- 0.5 oz Yellow Chartreuse
- 0.25 oz Tanqueray 10 Gin
Directions
1) Stir in a cocktail glass.
2) Strain into a chilled small wine or sherry glass.
3) Garnish with an orange twist.

Ingredients
- 20 oz Passionfruit Base
- 6 oz Unsweetened Coconut Milk
- 1 oz Fresh-squeezed Lime Juice
- 5 oz Water
Passionfruit Base
- 200 g Passionfruit Puree
- 200 g Sugar
- 200 g Water
Directions
Passionfruit Base
1) Blend all ingredients together in a blender.
Soda
1) Mix ingredients together.
2) Strain and pour our into a siphon.
3) Charge with carbon dioxide.
